Our People
Every season at Evolution is run by a small, close-knit team who look after the floor, the bar and the kitchen. From morning breakfast through to late-night cocktails, the same faces welcome guests back to the Chaudanne.

At the heart of Evolution in Meribel, the team behind the bar and kitchen works year round to keep a welcoming, family-friendly table in the mountains. Since the restaurant first opened in 2004, the same close-knit group of locals and long-standing colleagues has shaped the atmosphere, looking after the floor, pouring cocktails, and plating the homemade dishes that define the carte. The people you meet here are the reason regulars return and holidaymakers keep the diary marked, contributing to an experience that feels both cosmopolitan and firmly rooted in the alpine valley setting, with live acoustic music and a relaxed bistro style running from breakfast through to late-night dining.
Opening Hours
Evolution is open from 8.30am to 1.30am, serving breakfast, lunch and dinner in the heart of Meribel, opposite the Olympic pool and Ice rink.
